>> We are trying to innovate here and so we're trying to re-imagine what it means to taste chocolate. So, we said there must be a better way to do this and we started to go back to the very heart of chocolate, which is cacao. And cacao basically has inherent flavors and we've mapped them on to a flavor wheel. And because we are a small company, I think we have the ability to actually deploy technology in new innovative and effective ways that even big companies can't do and it starts with the lab.
>> Okay, so, so, we're here in the TCHO Flavor lab and it's kind of the nerve center for the whole system here. It's where we basically take beans, roast them, crack them, turn them into chocolate and what's kind of cool about this lab is that it's really indicative of who we are in so many ways. It's scrappy, but not crappy, that's what we like to say is that we're kind of, we're Silicon Valley meets San Francisco food culture. So, one example of kind of how we are, you know scrappy, but not crappy using office shelf components, but the other thing is that you know, TCHO actually is the kind of really what it means, technology meets chocolate. And one example of that is the iPhone application we build. So, what it is, is it's a super cool interface. It's live video. It actually controls the Pan-Tilt-Zoom camera and also each one of these melangers that actually turned on I can actually control. Right now if I want to change the temperature, say if I want to change it, I can change it to like say 122, set it, and it will change it to 122 right up here. Cool huh? And then the other thing is we're using this as a prototype to do the factory. So, we are doing here, so we're test driving in here, shaking out all the bugs before you actually control the big equipments of the factory. This is a virtual platform that Fuji Xerox built for us. And so, we have a thing called the magic window, so you'll be able to look over the entire factory through this magic window and see the state of any piece of equipment. We got cameras all through the entire system that actually got a take real time data and map it into this three-dimensional world.
>> So, this is all about trying to use the best of current technology, appropriate technology to improve the processes that we have here and make better chocolates finally in the end.
